Fruit pies may be considered healthy when the crust is made of whole wheat flour; it has a rich nutty flavor and requires a little less shortening than when made of white flour.Fruit pie should not be served with a vegetable meal. The rich starchy pie fillings and cus­tards are among the most objectionable of all desserts.

Most fruits will lose the Vitamin C and other antioxidant contents during cooking. Baking certain fruits, e.g. blueberries in cakes is beneficial as discussed in our book “Is your foodkilling you”.
